Galão
Galão is Portugal's everyday coffee drink — a shot of espresso topped with plenty of hot, lightly foamed milk, served in a tall clear glass. Similar to a caffè latte but lighter and milkier, it is the default breakfast coffee in Lisbon cafés.

Whole milk
steamed to a light, silky foam, about 65°C (150°F)
Sugar

Instructions
Pull a fresh espresso shot directly into a tall, clear heatproof glass.
Steam the milk to about 65°C (150°F) with a small amount of fine foam — it should stay pourable, not stiff like cappuccino foam.
Pour the hot milk over the espresso, holding back the foam with a spoon, then spoon the foam on top. Serve immediately while the layers are visible.
Notes
Traditionally served in a tall clear glass. A galão is roughly 1 part espresso to 3 parts milk.
