Espressino is Puglia's answer to the marocchino — a double shot of espresso layered with cocoa powder and velvety steamed milk in a small glass, born in Salento cafés. Nutty, chocolate-edged, and stronger than a cappuccino, it is southern Italy's favorite small coffee.

Instructions
Dust the inside of a small clear glass with cocoa powder, coating the walls lightly.
Pull a double shot of espresso directly into the glass over the cocoa.
Steam the milk to a velvety microfoam and spoon a cap over the espresso.
Dust the foam with more cocoa powder and serve immediately.
Notes
From Salento, Puglia — similar to the marocchino but built on a double shot and served slightly larger. Some cafés add a swipe of Nutella inside the glass instead of cocoa.
